Figs and Lucifero cheese with a hint of lime

Ingredients
(for 4 people)
150 g Lucifero cheese
8 figs
2 untreated limes
1 sprig of rosemary
extra virgin olive oil, to taste balsamic vinegar, to taste coarse salt, pepper, to taste
Procedure
Pre-heat the oven to 180°C. Wash and dry the figs. Wash the rosemary and remove the leaves. Cut the figs in half and place them, one next to the other, on an oven tray lined with baking paper. Cut the cheese into slices of the same size as the fig (they mustn’t be any bigger), and place a slice on top of every half fig.
Wash the lime and grate the zest on top of the cheese, sprinkle over the rosemary needles and season with salt and pepper.
Roast in the oven for approximately 2 minutes, the time it takes to warm them up.
Dress with a mixture of balsamic vinegar and extra virgin olive oil.
