Cheese Maturing

Our dairy has two dedicated maturing areas: one for blue cheeses, and one for washed-rind cheeses.

All maturing rooms are equipped with a dynamic climate control system that creates the ideal conditions for proper cheese ripening.

We produce a wide range of cheeses, from fresh varieties to those aged up to three months. Every cheese is matured following precise steps, which define its flavour profile and ensure food safety.
